Black cumin seed (Nigella sativa ) is an annual herbaceous plant and a member of the Ranunculaceae (buttercup) family. The fruit of the plant, the black seeds, accounts for its name. Considered native to the Mediterranean region, black cumin seed is cultivated in North Africa, Asia, and southeastern Europe. The largest producers of black cumin seed are Egypt, India, Pakistan, Iran, Iraq, and Turkey. Other species, such as Turkish black cumin (Nigella damascena ), are not used medicinally; and one type, Nigella garidella, is even poisonous.
Fenugreek seed is the ripe fruit of an annual herb. This robust herb has light green leaves, is 30-60 cm tall and produces slender, beaked pods, 10-15 cm long, each pod contains 10-20 small hard yellowish brown seeds, which are smooth and oblong, about 3mm long, each grooved across one corner, giving them a hooked appearance.
They look similar to sesame seeds but are black. The type that you eat typically comes from sweet basil, Ocimum basilicum, which is the plant commonly used to season foods. For this reason, the seeds are typically referred to as sweet basil seeds. They also go by many other names, including sabja and tukmaria seeds. Basil seeds have a long history of use in Ayurvedic and Chinese medicine, but their health effects have only been tested in a few studies.
The dry fruits are known as coriander seeds. The word "coriander" in food preparation may refer solely to these seeds (as a spice), rather than to the plant. The seeds have a lemony citrus flavor when crushed, due to terpenes linalool and pinene. It is described as warm, nutty, spicy, and orange-flavored. They are used extensively for grinding and blending purposes in the spice trade.
